Pumpkin Cream Cheese Roll-Recipe

Fall desserts are simply amazing! Not only do the flavors of pumpkin and spices taste delicious, but they fill your house with a wonderful scent! Today I am sharing a family favorite of ours and it will soon be a favorite of yours, too! Beware…once you make this…it will disappear fast!

The following will make one roll, but there is plenty of pumpkin puree left over, so I always double the recipe to make 2 rolls. Alternatively, you can make one roll and freeze the remaining pumpkin puree and use for other recipes.

Pumpkin Cream Cheese Roll:

3/4 cup + 2 tbsp. powdered sugar, divided

3/4 cup flour

1 1/2 tsp. pumpkin pie spice

1 tsp. baking powder

1/4 tsp salt

3 eggs

1 cup granulated sugar

3/4 cup canned pumpkin puree (not pie filling)

4 oz. cream cheese, softened (half of 8 oz. tub)

1 1/2 cups whipped heavy cream ( to sweeten the cream, I add approx. 3-4 tbsps. of powered sugar)

Grease a 15x10x1 inch rimmed baking sheet. Line with wax paper; grease and flour the wax paper. Sprinkle a clean towel with 1/4 cup of the powdered sugar.

Mix the flour, spice, baking powder and salt. Set aside. Beat eggs and sugar in a large bowl with an electric mixer on high speed until thickened. Add pumpkin and mix well. Add flour mixture and beat just until blended. Spread evenly into the prepared pan. (If you wish, you can sprinkle 3/4 cup of toasted walnuts on top of the cake before baking).

Bake in a preheated 375 degree (F) oven for 15 minutes or until the cake springs back when touched. Immediately invert the cake onto the towel. Very gently, peel the paper off. Starting on one of the short sides, roll up the cake and towel together. Cool completely on a wire rack.

Cream Cheese Filling:

Beat 1/2 cup of powdered sugar in a medium bowl with an electric mixer on medium speed until blended. Added the whipped cream and gently mix. Carefully unroll the cooled cake and remove the towel. Spread the cream cheese mixture over the cake. Re-roll the cake and wrap in plastic wrap. Refrigerate for at least 1 hour or until ready to serve. Sprinkle with remaining powdered sugar before serving. Add additional whipped cream or a scoop of vanilla ice cream, if you wish.

Enjoy and Happy Fall!
